En su \u00faltima publicaci\u00f3n en <a href=\"https:\/\/www.instagram.com\/p\/BYaEgQuhxJx\/\" target=\"_blank\" rel=\"noopener\">Instagram<\/a> ha hecho un encendido elogio de las tortas de Alcal\u00e1, el dulce ic\u00f3nico de <strong>Alcal\u00e1 de Guada\u00edra<\/strong>. Destaca de ellas su sabor \u00fanico y su delicadeza, dentro de la ya de por s\u00ed rica geograf\u00eda gastron\u00f3mica andaluza.<\/p>\n<p><a href=\"http:\/\/www.daviddejorge.com\" target=\"_blank\" rel=\"noopener\">Robin Food<\/a> ha publicado varios libros y se dio a conocer con el programa de TV de mismo nombre, que ha dirigido durante los \u00faltimos siete a\u00f1os. En su \u00faltima cr\u00f3nica gastron\u00f3mica se ha fijado en las <strong>tortas de Alcal\u00e1<\/strong> y le ha dedicado estas palabras:<\/p>\n<blockquote><p>Saben de sobra que me gusta m\u00e1s Andaluc\u00eda que comer pollo con las manos, \u00a1enorme festival!, aquello de despedazar pechugas, rasgar muslos y rechupetear huesos hasta dejarlos mondos y lirondos como si fu\u00e9ramos a pasar hambre el resto de nuestra vida. Aquella regi\u00f3n bendita es la patria del jam\u00f3n, de los molletes, de las casetas de feria, de Camar\u00f3n de la Isla, de las yemas de San Leandro, los pesti\u00f1os, el cortadillo de cabello de \u00e1ngel, las marroquinas, el pi\u00f1onate, los polvorones, las friturillas, las perrunas y las tortas de aceite, que son todas juntas verdadero patrimonio goloso para la humanidad.<\/p>\n<p>En concreto, las tortas de Alcal\u00e1 constituyen uno de los tesoros m\u00e1s delicados de la provincia de Sevilla, pues se manufacturan apenas a veinte kil\u00f3metros de la misma Giralda y en una localidad reputada por su tradici\u00f3n harinera, no en vano muchos la reconocen como \u201cAlcal\u00e1 de los panaderos\u201d, ah\u00ed es nada.<\/p>\n<p>La ciudad produce much\u00edsimas tortas y posee muchos despachos en los que las elaboran de forma artesanal, con su sabor \u00fanico y potente, distintas a cualquier otra especialidad confitera, pues son sutiles a rabiar, delicadas y cargadas de matices. Son gloriosas las de las hermanas Portillo, las de San Joaqu\u00edn, las del horno Nueva Florida, las de Joaqu\u00edn Portillo y las de Francisco Portillo e hijos, que como habr\u00e1n comprobado conviven todas juntas pero no revueltas.<\/p>\n<p>Pero en particular destacan las de La Centenaria, que son herederos de Manuel Cabreja y se las curran nada m\u00e1s y nada menos que desde el a\u00f1o 1860, que suena como a la Guerra de Cuba. En su composici\u00f3n emplean harina de trigo, manteca de guarro, az\u00facar, ajonjol\u00ed, lim\u00f3n rallado, canela, un pellizco de clavo y son crujientes a rabiar, ideales para empujarlas con un orujo bien fresquito, un g\u00fcisqui o un taponcito de ron cubano.<\/p><\/blockquote>\n<!-- AddThis Advanced Settings generic via filter on the_content --><!-- AddThis Share Buttons generic via filter on the_content -->","protected":false},"excerpt":{"rendered":"<p>David de Jorge Ezeizabarrena es un reconocido cocinero vasco que salt\u00f3 a la fama con el sobrenombre de Robin Food.
